Ever since Lauren Conrad made homemade apple pies for her wedding guests, I’ve been kind of obsessed with the idea of baking for the big day! [insert collective gasp] YES, I do realize that this probably seems like an insanely daunting & impossible task, however if executed & planned correctly I kind of think that baking your own dessert would add for the most perfect, personal touch! ** Side-Note: keyword = kind of. I shall not be held responsible for the above statement whenever my “big day” comes 😛

DIY Gluten-Free, Vanilla Wedding Cupcakes

I love cupcakes for a wedding… they’re cute, easy to manage & a total win on the budget spectrum! Not to mention, this would actually be a pretty manageable baking project if you decide to go the whole route of baking your own wedding dessert!

Lucky for me (& YOU), my cousin Jess just so happens to be a complete & utter superstar in the baking department & she’s oh so graciously sharing her gluten-free cupcake recipe with all of us today! And folks, if you ever have the chance… you simply must try some of her delectable sweets (they’re to DIE).

Ingredients

  • 3/4 cups white rice flour
  • 1/4 cup + 2 tbsp tapicoa flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 2 eggs
  • 1/2 cup + 2 tbsp white sugar
  • 1/3 cup mayonnaise
  • 1/4 cup milk (can add more)
  • 1 tsp vanilla extract

Optional 

  • 1 cup mashed bananas
  • Blueberries
  • 1 cup mashed strawberries

Optional Topping 

  • 3 tbsp melted butter
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon

Directions 

  1. Sift together first 6 ingredients
  2. Beat together next 3 and then stir into dry ingredients. Add liquids at the end mixing tougher well.
  3. Pour into cupcake tins
  4. Bake at 350 degrees for 15 min or until toothpick comes out of the middle of the cupcake clean.

*** To turn these into muffins, you can add fruit such as bananas, strawberries, blueberries etc.

PS. This recipe would also be perfect to make for engagement parties, teas, showers, bachelorette parties… the whole shebang!
